Can this be fitted with iron sights? Also is there anyway to mount optics that are not rifle scopes?

Jesse, a Gunsmith would need to add Rifle Sights. Mounting iron sights would require machine work by a good gunsmith you could mount a red dot on the forward rail section you cold also make a adapter plate that mounts on the rail sections to mount whatever else you want
