Do you think it is possible to mount a long eye relief scope onto the picatinny rail or would it not be far enough away?

This would be possible Austin. depending on the scope and the rings you will be fine. Most long eye relief scope are short (physically) and you could push it as far forward in the rings as you can that would put it way forward and work just fine
