sorry without it being MOS there is no way to attach a adapter plate. Here is a company that will cut your slide for optics mounting https://www.guncuts.com/slide-optics-cuts/

What you would need to do is find a quality company that will mill the slide for a Direct fit for the optic of your choice (In your case, the Vortex Defender ST Red Dot optic). As far as a cover plate to put on if you remove the optic, that you'd have to ask the company if they can fabricate one.
