Hi Tristan and welcome. Yes, FS = Fixed Sights. G30 Night Sights available here: https://www.budsgunshop.com/product_info.php/products_id/31906/trijicon+600227+bright+%26+tough+night+sight+set+3-dot+tritium+green+with+white+outline+front+%26+rear+black+frame+for+glock+20212
The SF variation on Gen 3 Glocks stands for short Frame. This only pertains to the grip. It's a bit shorter from front to back allowing for a better grip for those with smaller hands. Aside from that, everything else is the exact same as the Gen 3 G30. And yes, all Glocks have removable sights that can be replaced with night sights of your choice. Just make sure they are meant for your specific Glock model. I own a Gen 3 G21 SF and a Gen 4 G30 which has the same grip dimensions as the Gen 3 G30 SF. I put Trijicon night sights on all of my Glocks.
