The #6 and #8 refer to the height of the sight with #6 being slightly lower than an #8. The Sig P320 Compact ships with a #6 installed on the front and rear sights (at least mine did). This makes sense from the aspect that a "compact" model is general used as a CC handgun and a lower profile sight is a little easier to conceal (but the actual height difference between the two sizes in not that great). However, you can use #8s or mix and match to as needed. This allows you to adjust the point of bullet impact. In fact if you check with the Sig web site you will see various combinations of the two sizes for all the P320 models. The physical size, installation wise is the same, only the height of the sight is deferent between the #6 and #8 sights.
