This must be a "Special EAA polymer 1911" that Bud's has made just for them?? So I was wondering what type of wood they are made of and, and, how do they attach since the "GRIPS" on the EAA poly 1911 are a part of the frame and not removable.

This model is not made just for Bud's, it is available everywhere.  The description is inaccurate.   It does not have wood grips.  You are correct, you cannot replace the grips as they are a part of the frame.

unknown what kind of wood the grips are made (contact EAA at (321) 639-4842) of but it does have removable standard 1911 grips so you have a wide range of available grips it uses 1911 grip bushings  see the exploded view on page 19 of the owners manual http://eaacorp.com/index.php?option=com_djcatalog2&format=raw&task=download&fid=4&Itemid=1252
