I see that the specs say it's set for an AR15s 1.5" height. The scope rail on my SKS is a bit higher than that. I imagine a quick sight adjustment after mounting would be all that's needed, correct?

Forest, you will need a half inch "Riser" of your choice and you will be set.  https://www.budsgunshop.com/catalog/search.php?q=riser+rail&type=    --  (You will almost max your vertical adjustment to get this scope zeroed on your SKS).
