If I wanted to take the handles off a birds eye and replace with a standard Heritage grip, is that possible?

They will not fit due to the shape.

Hi Karl and welcome. No, the Birds Eye pistols have a different lower frame : https://shopheritagemfg.com/shop-by-category/parts-maintenance/heritage-small-bore-bird-head-backstrap-assembly ------------- You would have to replace the lower frame with the standard frame to replace the grips with standard grips.
