Hi Debra, yes this pistol is very easy to take down clean and reassemble, as far as racking the slide it's a breeze, my 11 year old daughter has no issues when we are at the range, cheers and stay safe!
No for your personal physical limitations it would Not be Easy to rack. I suggest a revolver for you and your circumstance.

Hi Debra, it's not hard to rack, but it is not marketed as an easy rack gun, so it may be a bit much for your arthritic thumb. Yes this gun is easy to rack but the recoil can be a bit brutal on arthritic hands. My mom has had surgery on the ligaments in both of her thumbs and she hates that she got this gun.
