You are fine with the 5 day grace period and E-check I pay parts of my layaways with e-check and some with credit cards and the only charge the 3% on the amount that you use the credit card for not the whole amount

Your good. I use the echeck on all my stuff including putting items in layaway. As long as you made the initial down payment within the 5 days your ok, And from what you posted you did.

No you don't. I did the same thing. They credit my payment that day. It's an e-check so the money is verified and claimed right then by buds. It's a way to avoid CC fees. Like a direct payment from your account to them. No middle man/ visa to take a cut. If you already paid with e-check you good. And I think you have to finish the payments with e-checks to get the cash price discount.
