Typically bore sighting will be good enough to get you on paper (12" target) but whether that's good enough to take game really depends on what your hunting and what kind of range you expect to take them at.
You can and should zero before ypu hunt, the only downside of zeroing near your stand is you could scare off what your trying to hunt. Id find some blm land right as you get out of town and pull off and zero your rifle before your anywhere near your stand, having your scope zeroed in could be the difference between a quick clean kill and a deer/elk running off injured bleeding out slowly and painfully, and even then you may not find its final spot.
But yeah just zero it on your way out to the field you'll be fine, be safe and happy hunting.
